Square Foot Gardening: A New Way to Garden in Less Space with Less Work by Mel Bartholomew (Mar 10, 2005).
If you’re starting out with one book, this should probably be the one.  Easy to read and understand.

The Sustainable Vegetable Garden: A Backyard Guide to Healthy Soil and Higher Yields by John Jeavons, Carol Cox (Feb 1, 1999).
A little more technical than the above, but with an added emphasis on sustainability and self-sufficiency.
